Cottage Cheese Stuffed Indian Bread


Kulcha an Indian bread delicacy, is very famous in road side eateries and sophisticated restaurants as well. It is quite tedious to prepare at home and for the same reason I avoid making it at home. If not for the guests, whose only demand was a typical Rajasthani spread with some unusual stuff, this recipe would not have seen the light of the day!.
Kulcha was the first thing that came to me, other than the normal chapattis, pooris and stuffed parathas. And the recipe goes like this;


Ingredients;
For the Kulcha (makes 10-11)
  • 4 cups of Maida (refined flour)
  • 2 tsp of dry yeast
  • 1/2 tsp of caraway seeds (ajwain)
  • 1 tbsp Curds
  • salt as desired
  • water as required
  • Oil to shallow fry 

Method: Dissolve the dry yeast in half a cup of warm water and keep it aside. Mix caraway seed, salt and a little oil in the flour and rub it to mix it evenly. Add 1 tbsp of curds and again mix it thoroughly.
Pour the yeast mix in the flour and lightly rub the whole flour mixture with finger tips. Use warm water to make a soft dough. Cover the dough with a moist muslin cloth and keep it aside for 3-54 hours to let it rise.
Heat a girdle, take a small size dough and make a round ball using dry flour. Roll into a thick round circle and fill the stuffing inside.


For the Filling:
  • 1 onion
  • 1/2 cup of fresh cottage cheese (paneer)
  • 1 tsp of chilly powder
  • 1 tsp of Garam masala
  • 1/4 tsp of Turmeric powder
  • salt as desired
  • 1 tsp of fresh mint leaves
  • 1 tbsp of sesame seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp oil

Method: Peel and grate the onion. Heat oil in a wok andcrackle mustard and cumin seeds in it. add the grated onion and the crumled cottage cheese and all the dry powder, stir it for a while. Cook for 2 minutes and take off the flames.
Mix in half the shredded mint leaves in the cottage cheese mixture.

Cottage cheese Indian Bread: Add 1 tbsp of htis mixture in the flattened dough and close it tightly. Dust it with flour and roll it gently into a circular shape chapatti.Sprinkle the sesame seeds and srest of the shredded mint on the chapatti.
Heat a flat girdle and fry this stuffed bread sprinkling a generous amount of oil on both the side.

Note : 
  1. Cook the stuffed bread on the inverted tawa (girdle) directly on the flame for the tandoor effect.
  2. This bread is a perfect meal in itself, just enjoy it with fresh coriander chutney or palin butter.
  3. Goes well with any Indian curry made with vegetables or pulses.
  4. Serve hot with raita made with fresh curds or yogurt.
