Kesar Peda is one of the 30 recipes I did for an assignment for a regional magazine. The issue is out and is liked by many who called to say the same. Here is quick saffron Peda recipe;
- 1 cup Cottage cheese (paneer)
- 4 tbsp. condensed milk
- 1/4 cup sugar
- 1/2 tsp. cardamom power
- Few Saffron strands
Heat a non-stick pan, add cottage cheese and saffron in it. Cook it for 6-7 minutes on medium heat till all the moisture is dried completely.
Add sugar and condensed milk in the above mixture, cook for another 2-3 minutes till the mixture forms a soft ball. Add cardamom powder and mix well.
Let it cool slightly. Make small balls and flatten to give the shape of Kesar Pedas. You can also roll the dough and cut it into circles.
