This eggless cake recipe is quite easy to bake and can be adapted well to cook a steamed version of cake.
I use the same batter to fill small aluminium moulds and steam them in a pressure cooker (without vent) for about 20-25 minutes.
Custard powder used in the recipe gives a light texture to this egg less cake. The idea of using custard powder in baking a cake came from Aparna's blog.
You can replace the custard powder with cornflour.
The goodness of Dates and wonderful aroma of cinnamon and nutmeg make these cakes a perfect tea-time goodies.
At times I replace Dates with Date syrup which is readily available in market. The syrup reduces time to assemble and bake this cake.
The rapid increase in the number of groups on Facebook is a menace if you are one of those unfortunates who have been added blindly every other day by their admins without your consent and with no relevance to the subject of your interest.
I was added to this particular group almost a year back and I ignored it with the pretext of just another FB group where bloggers drop in to give a shout out for their new blog posts or share the pictures of their cats.
But to my surprise, this small group has come out as one of the most active, focused and close-knit family of bloggers from Chennai on Facebook.
This is Chennai Bloggers Club or CBC, a bundle of young, enthusiastic and talented bloggers from Chennai. This group has made me realize the mighty powers of pen and to think about writing beyond food.
You don't need a reason to indulge in a dessert if you like all that is sweet and which brings you closer to your family on a Sunday! A scrumptious dessert always brings smile on every face. I baked this fruity cake last week and found that a few slices were left in the box. I packed the slices in a zip-lock and refrigerated so that I can use the same for the weekend.
And this delicious fruity Trilfe is what was out after dinner treat during one such weekend while playing a board game together.
