Ingredients;
1 cup refined flour
2 tbsp. of sugar
1 tsp. Baking powder
A pinch of salt
1/2 cup of orange juice
1 tbsp of yogurt or 1 egg
3 tsp. of oil
Method: Sift the flour and baking powder together and add salt to it. Mix sugar, oil, yogurt and the orange juice in another vessel and beat it till the sugar is dissolved.
Preheat oven at 180°C for 10 minutes and grease muffin molds with oil.
Mix the dry ingredients into the wet ingredients and fold it into a batter. Do not over mix the batter.
Pour the batter in the muffin molds and bake it for 15-20 minutes at 180°C.
Take out from the oven and let it cool for 10 minutes before taking the muffins from the molds.
Serve the muffins with fresh cream or sprinkle powder sugar over the orange muffins. Since these egg less orange muffins are made with refined flour or maida, these are very light and fluffy.
These muffins stays good for about a week. I normally avoid using refined flour for baking. But since Different Strokes is for indulging in food, with no diet rules to follow, these orange muffins have got their place here.
