I have always used Pineapple to bake a cake or to make desserts, but never tried baking cookies with it. I feel the watery consistency of pineapple will make it difficult to bake perfect crispy cookies. But after baking these chewy cinnamon cookies canned Pineapple I am sure I will be baking these more often.
The small chunks of pineapple in every bite make these cookies a real treat. You can call these cookies a cross between cookie and scones.
Ingredients;
- 3 cups All purpose flour
- 1 cup crushed pineapple pieces
- 1 cup white sugar
- 3/4 cup melted butter
- 1 tbsp. yogurt/curd
- 1/2 tsp baking powder
- 2 tsp cinnamon powder
- 2 tsp brown sugar
- 1 tsp orange zest
- 1 tsp. salt
Method; Drain liquid from the canned pineapple and crush the pieces with a fork or dice it small with a spoon. Grate the outer skin of orange to get 1 tsp. of orange zest.
Grease a baking tray with oil or line it with a butter paper and pre heat in an oven at 190°C.
Beat melted butter, white sugar and yogurt in a bowl till sugar melts. Add crushed pineapple pieces, orange zest into the wet ingredients.
Take another bowl and add All purpose flour (maida), salt, baking powder and mix well.
Pour the wet ingredients into the dry ingredients and mix well to combine. Add 1-2 extra spoons of flour if the dough is too wet.
Mix cinnamon powder and brown sugar and spread it in a flat plate.
Pinch small balls from the dough and roll it in the cinnamon mixture. Arrange all the cookies in the baking tray keeping a gap of 2 inches between each cookie..
Bake the cookies at 190°C for 8-10 minutes.

Note;
- These cookies are mildly sweet, add extra sugar if you like sweet cookies.
- Make sure you drain the liquid completely before adding them to the dough.
- Replace orange zest with lemon zest for a different flavor for these cookies.
A combination of pineapple and orange is tremendous, and the style of preparation is very simple. I love to add it in my menu card.
