This Crispy Tea-Time Snack is a delicacy which does not call for any occasion.. Seen in most of the tea shops all around the South of India, it needs no introduction. Masala 'Vadai' or simply called 'dal vade' has many fans reaching out for it overlooking the place and the way it's been prepared in many small shabby shops. All that they want is just to grab one and crrrunch...!! Its heavenly, believe me.
Try this recipe for a simple vade made with Channa dal (Chickpeas).
Ingredints;
- 1 cup of Channa Dal (Bengalgram or chickpeas)
- 1 onion
- 3 red chillies
- A few sprigs of curry leaves
- Oil for deep frying
- A oinch of asafoetida (hing)
- Salt as desired
- water as required
Take a little of the above mixture and shape it into a round ball with both hands. Make if firm by applying a little pressure and flatten it a bit to give the shape of vadai.
Heat oil in a kadai. let it come to smoking point and then drop the vadai in hot oil. Fry the vadai till it is golden brown on both sides. Shape all vadais and fry the same in the oil, take out and keep on a tissue paper to remove the excess oil.
Note: If the mixture becomes too liquid, add besan or chickpea flour. If the mix is too thick add little water to adjust the consistency.
Serve hot with coriander chutney or tomato sauce. Enjoy these melt-in-mouth crispy tea time snack at any time of the day.
